First, the method was seen as niche, but now it’s one of Ethiopia’s most talked-about processing styles. With this year's processing they improved this method even by integrating Kenyan 72-hours washed protocol (K72) and the classic yellow-honey processing. \u003c\/span\u003e\u003c\/p\u003e\n\u003ch3\u003e\u003cb\u003eDry fermentation washed\u003c\/b\u003e\u003c\/h3\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eWhen the coffee has been picked, the fresh cherries are first floated in water, then pulped, and placed directly into a dry fermentation tank. The pulped coffee is 72 hours fermented and in mid-fermentation a clean water rinse is applied so the coffee doesn’t get overfermented. Eventually the coffee is dried in thin layers on African raised beds. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eBecause of this processing the coffee gets a high clarity and tea-like body.
