Why we chose this coffee
This coffee we couldn’t miss this year! We weren’t familiar with the coffee from Salado Blanco but were immediately impressed by the floral and clean cup we tasted. The coffee tasted very complex in acidity when hot and cooled down in very sweet notes like caramel and cranberry.
Salado Blanco
The coffee is imported by CATA, through this exporter Salado Blanco gained more possibilities for quality control, technical support and reaching international markets. The group of farmers of Salado Blanco are located in Timaná, southern Huila. Huila is known for a very classic and typical citrus and orange-like cup in Colombia. This coffee reminded us of that beautiful cup.
The variety of this coffee is Castillo. Castillo is a variety made in 2005 by Canicafé, Colombia’s coffee research institute. Because the variety is made for Colombian climate and for the Colombian National Federation of Coffee Growers (FNC), you will find the variety almost always in Colombia.
Salado Blanco has been processed using the washed method. After pulping the coffee cherry the farmers oxidized the coffee for 48 hours. Then the coffee got sun dried on raised beds.
