About this coffee

This year we found a beautiful coffee from Colombian producer Jhonatan Gasca. Last year we tasted a coffee from Zarza roasted by Replica and were blown away by its high acidity and sweet licorice. We selected a different coffee, natural processed with notes of black tea and fruity winegums and a strawberry aroma. 

Zarza

The coffee comes from a third generation family enterprise named Zarza Coffee. They are located in the mountains of Bruselas in Huila. Zarza as a name is linked to the family surname Gasca, symbolizing unity and commitment to excellence. The Gasca family developed projects grounded in innovation in processing, traceability and sustainability on the farms. Beyond coffee production, they integrated beekeeping as part of their agricultural ecosystem. From 2022 onward, Zarza refined its fermentation and oxidation management to accelerate coffee processing. These improvements make us and a lot of other people enjoy their passion, elegance and dedication to high quality Colombian coffee. 

Processing

Starting with whole ripe cherries, they initially briefly oxidize the coffee allowing the natural yeasts to activate and increase complexity before controlled fermentation. 

While extended natural fermentation they focus on the development of fermented aromatics while being aware of not overfermenting the coffee though temperature management and a sealed environment. A slow natural drying follows for 20 to 30 days depending on climate conditions. After a stabilization of the dried cherries in bags for 10 to 20 days the coffee ends up into a moisture content of 10 to 11 percent. Despite extended natural processing, the coffee has a soft sweetness and acidity.
