Honeymoon Washed 2.0
The secret behind Honeymoon Washed’s sweetness lies in its advanced processing technology: Dry Fermented Washed, translated locally as “Honeymoon Washed”. First, the method was seen as niche, but now it’s one of Ethiopia’s most talked-about processing styles. With this year's processing they improved this method even by integrating Kenyan 72-hours washed protocol (K72) and the classic yellow-honey processing.
Dry fermentation washed
When the coffee has been picked, the fresh cherries are first floated in water, then pulped, and placed directly into a dry fermentation tank. The pulped coffee is 72 hours fermented and in mid-fermentation a clean water rinse is applied so the coffee doesn’t get overfermented. Eventually the coffee is dried in thin layers on African raised beds.
Because of this processing the coffee gets a high clarity and tea-like body. Because of the fermentation the coffee is somewhat higher in body and sweetness. The Yirgacheffe terroir and Ethiopian varieties make us taste a lot of citrus, together with tea-like notes as chamomile and jasmin.
